The meta answer is a six-letter proper noun.
Hello, friends, and welcome to this week's Monday Muggle Meta. Thanks to MMM-meister Peter Abide; to Alan Kennan for adding some especially witty clues (one of his trademarks); and to Joe Ross for his formatting help. Nudges will be posted on Wednesday, though I suspect this puzzle will be firmly in the wheelhouse of many Muggles.
Nudges: Step 1: Say the asterisked entries out loud. How do they relate to "Greek" in the title? Step 2 is a little trickier. How do the English and Greek alphabets differ? Which alphabet has more letters? The English alphabet has 26 letters: A is 1, B is 2, C is 3, etc. Same letter/number principle applies to the Greek alphabet. Now, how can you use those numbers vis-a-vis the six Greek letters that you sounded out in the grid?

                            A very apropos answer. The mechanism was what I thought it would be, so definitely in my wheelhouse this time and a quick solve. Actually, based on 1D, I was prepared to try a backup attempt in case you were using the alphabet number for the "opposite" letters to spell out your answer. I had an enjoyable time (unlike the recent WSJ puzzles) - thanks.

                                    The opposite of inelegant! This one had me stumped for quite some time. I saw NU in both peanuts and canoe… kept thinking this must be about homophones or something… but maybe I don’t pronounce these right?? (Which I could believe… I had a trig teacher who said phi as “fee,” and since that was my first introduction to Greek letters I’ve said that one wrong ever since.)

                                        Alas, I did not have a classical education and assumed that other languages had come around and adopted the good ol' US of A 26-letter alphabet. Not all are so ignorant. I asked for a nudge and the person sent it in ROT-12.

                                              Very good - too good for me. I kept trying to transliterate (?) the Greek letters into their Latin equivalents, and then doing that but starting from Z (per 1 down), needed the second set of nudges to make sense of it and only needed A-T to know the answer, DOH!!!
