Nice one. Had to ignore TREE and DELL, but by that point the answer was pretty clear.
Again, the doublings have to work in both directions. So, yes, SHOOT and CHOOSE are included (giving you an O), as is SPEED (it crosses with STEEP, giving you an E), but not TREE or MOORE. The last letter comes from MOUSSE crossing LESS.
Oops! I didn't parse your punctuation correctly. Yes, given the dearth of double-I words in English I had to resort to Latin!

I laughed at SHITE and a funny coincidence helped crack it for me. A while back I was doing some "constructing" and needed a word to fill SHIITE fit perfectly but I then saw I needed a 5 letter word not a 6 letter...and I had no good reason to include it, so I went a different way. Trouble is that I was not smart enough to see it as a mechanism, while Ben was! At first I thought "well this is going to be random" because I had never heard of OBIIT and there were lots of words that one could double a letter to make a new word. BUT when I got to CHOSE and made it CHOOSE then saw I had TWO new words I went back and looked at OBIIT.
Fun as usual puzzle from our awesome Aussie.
I nearly didn't do this puzzle because of SHITE. There are almost no I words that you can double the I and still have a real word. I needed to use Latin for the other one!
Oh, I think in a universe of TWERK, URINE, PEE and other fill you are allowed a SHITE, particularly in such a great puzzle. For chuckles I looked up double i words - not much unless you wanted a much longer entry.

I was thrown for a bit because I never caught on that 34A was a clue and I needed to look up obiit. And it took me forever to get Dday! Great puzzle, Ben! Thanks.

I wondered why I kept seeing MOUSSE in the corner rather than MOUSE; wasn't just wishful thinking after all! :)
Because of the clue, I knew SHITE played a part, but didn't notice the crossing OBIT clue was emphatic also.
This was great! (Although I needed early nudges to get me going and later ones to clarify.)

Needed the second nudge! I was playing with adding/subtracting/looking at letters between “T O”. I like your mechanism though! Very clever! Thank you!

I was off the beam, looking for word pairs. Came up with AUTOBAHN and TINYSTEP, but wasn't getting much further.
I thus needed the first three nudges to find the right coupling, though two might have been enough if I'd been more patient. (I backsolved for the "I" and thus didn't need the last nudge). Very clever disguising.
