Riding the struggle bus on this one! Enjoyed it though.

Hands are a unit (horses) pianist has 7 letters not 6

Came here to say this (re: hands)

This was fun but definitely challenging, as @kurtalert said… I gave up without finishing 1A/5A. Loved some of the clues, especially 26A and the first and last ring!
I felt there were a few minor clue errors:
        • In the ring (under 1A): “One with a desk job?” is actually 7 letters (not 6)
        • 15A was new to me so I looked it up, and it seems to always be “Bava Kamma”
        • The “twisting” sense of 24A doesn’t seem to quite agree
        • In 25A, I love the idea of the clue, but a hand is actually a unit too (it’s the traditional unit of height for horses, and has since been standardized)
        • 5D and 6D probably make sense… but not to me.

You aren’t alone in 5D and 6D not making sense. Also came here to mention hands.

My best guess is that 5D is a reference to those man-on-the street videos where they tell passersby to "name any woman for a dollar"? I think 6D is diet, in the verb form, because dieting is cutting food. (Agree with all your other points btw!)

The (#)s on these never seem to add up to 28
