In my kitchen is a cookbook titled "Pedaling Through Provence" by Sarah Leah Chase. She describes 2D as a dish to "prepare when hunkering down for winter's worst." This dish requires a bold red from the Rhone - preferably a "chewy" red from Cote-Rotie or Chateauneuf-du-Pape. And though I've never made this dish, I think I'm going to have to with the cold weather we're supposed to get next week.
